Pork in Mushrooms

A great fun quick and delicious recipe without the cream of mushroom soup, and it is better.  I think you will like it so much you won't go back to using the canned soup.  I used thin-cut center-cut boneless chops.  The thin cut cooks faster and there is less chance of the meal turning out dry. Here is the recipe:

Pork in Mushrooms

Pork chops of your choice [I used boneless center-cut, thin cut]
1 c. beef broth
1-2 c. mushrooms [your choice, I used button mushrooms this time, I have used Portobello, Cremini ]
1 tsp Worcestershire sauce
1/2 tsp. garlic powder
2 Tbsp. low sodium soy sauce
2 Tbsp. cornstarch
salt & pepper to taste
6 scallions
Long grain rice [ your choice on rice, I have used brown rice, jasmine rice as well, all are delicious]
1 c. White Vermouth

1. Season pork loins with salt & pepper to preference.
2. Use 2 Tbsp. olive oil & 2 tbsp. butter in large skillet to lightly brown pork loins.
3. Remove loin chops to plate and keep warm.
4. Lightly brown mushrooms on both sides.  Remove from heat.
5. Start sauce in saucepan, stir together 1 c. beef broth, Worcestershire sauce, soy sauce, garlic powder, salt & pepper.  Mix cornstarch with 3 Tbsp. of water and stir into sauce mixture.
6. Start rice. Use 1 c. white vermouth with 1 c. rice.  Bring to a boil.  Turn down and simmer until rice absorbs vermouth.
7. Slice scallions while rice is simmering.
8.  First layer in pan is rice, second is loin chops, next is mushrooms, pour on sauce mixture, and top with scallions for the last layer.
9. Apply a foil cap.  Bake at a 350 degree oven for 20-30 minutes or until bubbly.
10.  Let Pork in Mushrooms rest for 10 minutes before serving.

There is Rooney again and all her positive attributes.  She is very professional on photo shoots, and easy going.  Does not behave temperamentally.  Rooney is eager to please and is treat motivated.  She knows there is always a reward for her participation and contribution.  I love this photo.  You can tell she can smell the apple from where she sits three feet away.  Delightful!
